What does it mean when a scraper makes a different sound or leaves a whitish mark on the wood?

That happens when you scrape against the grain direction instead of with it. Scraping with the proper grain direction produces a nice shiny cut, while bucking the grain produces a whitish appearance and a different, often louder, sound.
