Should I expect iron nitrate to produce an exact target color on my stock?

Iron nitrate will look good and appropriate, but each piece of wood stains and finishes a little differently: some come out more red, some more brown, and some lighter if the wood is very hard. Jim advises staying flexible rather than trying to force a specific color, since heavily curled areas absorb more stain and end up darker.
