How many times should I raise the grain on a stock before finishing it?

It depends on the wood and how fine a finish you want. Raising the grain once gives a coarser finish, while doing it two, three, or four times gives progressively finer results. Some hardwoods barely raise a grain at all, so under special circumstances it can even be skipped.
