What caliber should I pick for hunting?

Small game (squirrel, rabbit): .32 or .36. Deer: .40 or .45 is plenty, .50 also excellent. Bear or large Western game: .50, .54, or .58. Regional context matters, a .45 is standard for deer in most of the country but the West often calls for more.
