How many coats of finish does a stock need, and how do I apply them?

Plan on five or six thin coats. Let the first coat soak in, then keep every coat after that very thin so the finish builds up evenly instead of pooling. Rub out between coats with 0000 steel wool. In the inlets, use one coat only, and work it out of the small areas with a brush so it does not pool.
